Quick & Easy Vegan Trail Mix Granola Recipe

We are back in the kitchen, whipping up a few versatile snacks and meals that are healthy and satisfying. The first recipe is dedicated to our love of granola. Now over the years we have simply opted for buying our granola at the store and calling it a day without fully realizing how much sugar we were putting in our bodies by going this route. This is why we challenged ourselves to make homemade granola that was both healthy and delicious. And so we bring you our Vegan Trail Mix granola.  Keep reading to learn how you can make this quick and easy recipe at home.

Ingredients

  • 3 cups of Rolled Oats
  • 3/4 cup of Chopped walnuts
  • 1/4 cup of Raw Sunflower seeds
  • 1/4 cup of dry Cranberries or raisins
  • 1/2 Tbsp Cinnamon
  • A pinch of sea salt (optional)
  • 1/4 cup Coconut oil
  • 1/3 cup of agave or maple syrup
  • 1-2 tsps of vanilla extract

Directions

[ First, preheat oven to 350 ]

In a large mixing bowl, add the oats, sunflower seeds, cinnamon, salt, nuts, and dried cranberries together.

Step 2:

To make the syrup, heat a small saucepan over medium low heat and add the coconut oil, agave (or maple syrup) and vanilla extract. Once everything has liquified and is well blended, simply remove the pan off the stove and pour the wet mixture over the dry ingredients. Take a wooden spoon and mix everything until well combined.

You may need more than one baking sheet to avoid overcrowding the granola. Once you have laid the granola mixture evenly on the baking sheet(s), pop it in the oven and bake for 23-28 minutes or until golden brown. Just make sure to watch it carefully as the granola can brown too quickly.

Tip: If you want a more crumbly granola, make sure to stir the granola at the halfway point to break up any clusters.

Once the granola is visibly brown, remove it from the oven and do one final toss. Leave the granola to cool completely on the baking sheet. Store in an airtight container and enjoy on its own or with soy or almond milk.   The granola should stay fresh for 2 to 3 weeks.

    I would have to change up the walnuts for pecans and I like to add different dried fruit to our granola.
