Spicy Pumpkin Spice Popcorn
Bring a little Fall cheer this Halloween with a delicious Spicy Pumpkin Spice Popcorn recipe. This easy to make snack is sure to satisfy every pumpkin spice loving person at your party.
Ingredients
- 8 cups of popped popcorn
- 3 tbsp of butter
- 1/4 cup of brown sugar
- 1 tbsp of water
- 1/4 tsp of vanilla extract
- 1- 1 1/2 tsp of pumpkin spice
- ¼ tsp of cayenne pepper
- 1/4 tsp salt
- ½ cup of roasted peanuts
Directions
Pre-step: Line a baking tray with parchment paper
Before you start making your sweet buttery mixture, you need to make some popcorn. You can use kernels to make your own on the stovetop or simply use a microwave bag. You should have 8 cups of popped popcorn ( per each batch you make).
Step 1:
In a medium saucepan, melt the butter over low heat together with the brown sugar, pumpkin spice, water, vanilla extract, cayenne pepper, and salt. cook and stir over low heat until sugar is dissolved. Stir frequently so everything is well combined. Once the sugar is completely dissolved remove the pan from the heat.
Step 2:
Take a large bowl, combine the popped popcorn and peanuts. Carefully pour the sweet butter mixture over the popcorn and peanuts; mix with a spoon or tongs until everything is fully coated.
Step 3:
Now transfer the coated popcorn onto the baking sheet. Bake in the oven at 300°F for 10 to 15 minutes. You will need to stir the popcorn every three minutes to avoid any side from burning. Tip: Set a 3 min timer on your phone that you can restart after every stir.
Step 4:
Take the popcorn out of the oven and keep stirring every few minutes. The popcorn should get nice and crispy once it cools. Simply repeat the steps if you want to make several batches of this yummy treat.
For an added touch, grab a few Halloween treat boxes (or bags) and fill each box with your spicy pumpkin spice popcorn. These are great as party treats or to give out to kids, friends, coworkers, etc.
Enjoy!
Halloween “Finger” Rolls on a Stick
It wouldn’t quite be Halloween without some spooky Halloween fare. And what better way to add the festive factor than with these fun and yummy Halloween “Finger” rolls on a stick.
Ingredients
- 1 can (16.3 oz) Pillsbury™ Grands!™ refrigerated biscuits (buttermilk preferred)
- 4 to 8 Mozzarella cheese sticks
- 3 – 4 oz thinly sliced deli ham
- Roasted garlic Hummus
- Skewers cut in half
Yields 8
Directions
Prep Work
- Preheat oven to 350°F (or 325F for nonstick)
- Cut Each Mozzarella stick in half longways
- Cut Ham slices to fit inside the flat dough
Step 1:
Using a roller or palms of your hands, gently roll out each dough flat. Place one of the mozzarella sticks (that’s been cut in half) and a piece of ham on the center of the dough; Take the ends and start to roll the dough so it looks like a long roll. Don’t forget to pinch the ends so the filling doesn’t leak.
Tip: Feel free to make these vegetarian by skipping the ham. You can also add other fillings as well.
Step 2:
For realistic fingers, take a knife and start making making small horizontal lines at the bottom of the finger and near the top of where the nail should be to create knuckles. Next start to carefully outline a nail on the top of the dough (as shown). Place the “Fingers” on a baking sheet lined with parchment paper.
Tip: Make sure when making the horizontal lines and the outline of the nail that you use a little bit more pressure a little deeper on the dough as these lines can quickly fade in the baking process.
Step 3:
Bake the “Fingers” for 13 to 16 minutes or until golden brown. Immediately remove from cookie sheet.
Use a piping bag and pipe some of the garlic hummus along the lines you created on the fingers with the knife earlier. Fill in the outline of the nails, making sure to leave some of the “Fingers” only half filled to give the illusion of broken nails (as shown above). Put the “Fingers” back into the oven for 1 to 2 more minutes. Take them out of the oven. While they’re still hot (but be very careful), insert of one of the skewers through the “Finger” rolls halfway.
Set them on a warming plate to keep warm. Serve with Garlic hummus. Yum!
