We had so much fun making our Candy Corn cookies, we couldn’t wait to head back to the kitchen to bake some more fun Halloween treats. After some crafty brainstorming, we came up with these delicious Oatmeal “Monster” cookies that have just the right balance of sweetness to satisfy any sweet tooth at heart. Learn how to make these quick and easy little monster treats at home.

Oatmeal Cookies

- 1/4 cup of coconut oil, melted
- 1/4 cup of margarine or spread, softened
- 1 cup of cane sugar
- 2 Eggs
- 1 tsp of Vanilla extract

- 1 tsp of ground cinnamon
- 1-1/2 Cup(s) of all-purpose flour (or whole wheat flour)
- 1 tsp of Baking Soda
- 3 Cup(s) of Quick Oats, uncooked)
- 1/2 cup of chopped Walnuts

- 1/4 cup of white chocolate morsels
- 1 tbsp of milk
- 15 medium marshmallows

- 1/4 cup of chocolate frosting
- 1 piping bag with small circle tip (or zip block bag)

In large bowl, beat the butter and sugar with an electric mixer on medium speed until creamy. If you don’t have an electric mixer you can use beat the butter and sugar with a large wooden spoon.
Add the eggs and vanilla, and beat well.
Next, combine the flour, baking soda, and cinnamon. Beat until all is well mixed.
Finally, add the oatmeal and walnuts until all the ingredients are mixed together.
Line your baking sheet with parchment paper. Using a medium cookie scooper, scoop out oatmeal dough balls and squeeze them onto the baking sheet. Tip: Make sure to space out the oatmeal balls 3-4 inches apart.
To make sure the cookies cook evenly, flatten them with your fingers so they’re no more than 1 to 1/2 inches thick. Pop them in the oven for 9 to 10 minutes, or until light golden brown. [ Baking time will differ depending on how chewy or crunchy you like your cookie]
Take the cookies out of the oven and let them cool for 1 minute. After a minute, transfer them to a wire rack to cool completely.

Place a large heatproof bowl over a pot of boiling water. Add the white chocolate and stir with a whisk (or spoon) until smooth. Set aside. [Tip: When ready to start assembling, add the tablespoon of milk and whisk until smooth]
Take a marshmallow and cut it in half, then cut it in half again. Repeat the process on the rest of the marshmallows.
Next, fill your piping bag (or zip block bag) with chocolate frosting. Make sure to twist the piping bag, lightly squeezing the frosting so it peeks out of the tip.
Time to Assemble the “Monster” cookies. Take one of your marshmallow pieces and dip it in the white chocolate. Place it midway on the oatmeal cookie, making sure there is room for your other marshmallow eye. Repeat the process on all your cookies.
Take your chocolate frosting piping bag, and start to slowly make a dot on each of the marshmallow eyes for pupils. To make the monster teeth, pipe out a line just below the eyes. Next, carefully pipe out small triangle-shaped teeth. Let the frosting set for at least 5 minutes. And voila, you have your Oatmeal “Monster” cookies. Enjoy!
