[dropcap]A[/dropcap] Make-Your-Own-Tacos theme party is a great option to go with for a Cinco De Mayo celebration. It’s a fabulous way of giving guest a hands on experience of putting together their own “perfect” tacos, and you as host the freedom to enjoy your own party. Now we have created three different taco fillings that will satisfy both your vegetarian and meat lover guests.

Fillings

- 2-3 russet potatoes
- 2 chicken breasts
- 12 ounces of longostinos
- 1 1/2 cup of cooked green, red and yellow bell peppers
- 1 tsp of chopped garlic
- 1 tbsp of oregano
- 1 bay leaf
- 1/2 tsp of salt
- 1/2 cup of coconut milk
- 1/2 tsp of coconut oil

- mexican spice mix (recipe below)
- yellow corn tortillas
- chopped romaine lettuce
- chopped onions
- chopped tomatoes
- chopped cilantro
- slices of avocado
- favorite hot sauce
- Plain Greek Yogurt, low fat sour cream or Dairy-free yogurt (optional)

Mexican Spice Mix:

- 2 tsp of cumin
- 1 tsp of coarse black pepper

- 1/2 tsp of oregano
- 1/2 tsp of paprika

- 1/2 tsp of seasoning salt

To make the potato filling, simply fill a sauce pan with water and put it on medium high heat. Cut your potatoes a 1/2 inch thick (they should resemble potato chips) and add them to your pan, along with a bay leaf, oregano and salt.
Once the potatoes have fully cooked, switch to lower heat. Add the coconut oil, coconut milk, and if needed, salt to taste. Mash everything together until you get a creamy consistency.
Move to the longostino filling.
In a large skillet, add garlic and longostinos, and cook them over medium high heat. Tip: We’ve used fully-cooked longostinos so it’s just a matter of heating them up. However, if using fresh you will need to fully cook them before proceeding to this step.
Stir the longostinos ever so often to avoid any burning. They should be ready in 7-10 minutes. Take them off the heat and put a lid over them.
Finally we get to the chicken filling for our tacos.
Cut your chicken in long strips 2-3 inches thick. Take a large skillet and add your chicken, 1/4 cup of water, and 1/2 of your mexican spice mix. Stir everything together. Cover with a lid over medium high heat.
Five to seven minutes before your chicken is done, add the bell peppers and the rest of your mexican spice mix. Stir until well combined. Once chicken is fully cooked and vegetables are nice and tender, turn off the heat and cover with a lid.
Assemble the Make-Your-Own Tacos Bar
First heat up corn tortillas. Next combine the romaine lettuce, tomatoes, onions and cilantro in a large bowl. Cut slices of avocado and put them on a serving tray. You can make fresh salsa or use your favorite store bought one.
Line three bowls with aluminum foil and pour the potato filling in one, the longostino filling in the other, and so forth. Cover with more aluminum foil. This will help keep the fillings nice and hot.
Arrange the fillings, corn tortillas, garnish, avocado slices and salsa in an assembly-line style for a fun Make-Your-Own Tacos theme.
Serve with warm tortilla chips and our refreshing homemade horchata.
