We know Valentine’s Day is usually a day for showing our significant others how much we love them, but it doesn’t mean we can’t spread some of that love to the besties in our lives. While you should show your appreciation to the amazing friends in your life year round, doing something special on Valentine’s Day or (Galentine’s Day as we like to call it) can be that more meaningful.
Now we know your Gal pals are GirlBosses like yourself, so saving time is essential which is why we put together three fantastic recipes you can use to create Galentine’s Day Power Lunches for them. These delicious on the go lunches keep it light and healthy with turkey Lavash pinwheels( there’s also a vegetarian option) and Sweet & Spicy Mixed nuts, but just as decadent with chocolate dipped strawberries. Keep reading to find out step by step instructions on how you can recreate these fun lunches just in time for Valentine’s Day.
Turkey Lavash Pinwheels
These turkey lavash pinwheel sandwiches are filled with a spicy horseradish hummus spread, oven roasted turkey slices and veggies. [ We’ve also included a yummy Vegetarian option as well]
What You Need
- 3-4 tbsp Horseradish Hummus (or any hummus of choice)
- 1 medium tomato
- 1⁄2 cup of lettuce
- slices of deli turkey
- ⅓ cup of black olives
- 3 Lavash breads
- 2-4 Basil Leaves
- Slices of cucumber
- 1 jalapeno
DIRECTIONS

Step 1: Lay out the lavash and spread an equal amount of hummus on it.
Step 2: Now start assembling the sandwiches with the rest of the ingredients, making sure to lay the veggies first and then the slices of turkey.
Step 3: Gently roll up lavash starting from short side. Make sure to add a thin layer of hummus on the end of the lavash so that it will stay in place. Repeat the process until finish.
Step 4: Make sure to wrap rolls in cling wrap and refrigerate for at least an hour or until you are ready to cut them. When ready to use, just slice rolls crossways into small pinwheels.
And you’re done!
Vegetarian Option: Veggie Lavash Pinwheels
What You Need
- 1 cup of cooked rice
- 3-4 tbsp original Hummus (or vegan spread)
- 1⁄2 cup of lettuce
- 1 medium tomato
- ⅓ cup of black olives
- 3 Lavash breads
- 2-4 Basil Leaves
- Slices of cucumber
- 1 jalapeno
DIRECTIONS
Step 1: Lay out the lavash and spread an equal amount of hummus on it.
Step 2: Now add the veggies on top, followed by a few healthy spoons of cooked rice, vegan cheese and basil leaves.
Step 3: Gently roll up lavash starting from the short side. Make sure to add a thin layer of hummus on the end of the lavash so that it will stay in place. Repeat the process until all finished.
Step 4: Make sure to wrap rolls in cling wrap and refrigerate for at least an hour or until you are ready to give them away. When ready to use, just slice rolls crossways into small pinwheels.
Enjoy!
Sweet & Spicy Mixed Nuts
Skip the potato chips and enjoy the taste of these sweet and spicy mixed nuts instead.
What You Need
- 3 tbsp of Coconut oil
- ½ tsp of Cayenne pepper
- ¼ tsp of ground Cumin
- ¼ tsp of Paprika
- 1 to 1 ½ tsp of garlic powder
- 1 ½ cup of roasted unsalted peanuts
- 1 ½ cup of roasted unsalted sunflower feeds
- ½ cup of dried cranberries.
- Pepper (pinch
- Salt (optional)
DIRECTIONS
Toast the Mixed Nuts
In a large heavy pan, melt the coconut oil. Add the nuts to the pan and cook over medium heat for no more than 4 minutes or until nuts are lightly toasted. Take off heat.
Time to Make the Sweet & Spicy Mixed Nuts
Step 1: Add the nuts into a large bowl and sprinkle on all the spices.
Step 2: Toss until everything is well coated.
Step 3 & 4: Let it store in an airtight container and let cool completely.
Yields: 4 cups.
Chocolate Dipped Strawberries
These melt-in-your-mouth sweets are so easy to make, but will satisfy any sweet tooth.
What You Need
- 12 to 16 Strawberries
- 1/2 cup of Dark Chocolate Chips
- 1 tsp of Vegetable Oil
- Crushed peanuts (optional)
- Parchment paper
- Skewers
DIRECTIONS
Melt the Chocolate
Fill the bottom of a medium saucepan with an inch or two of water and bring to a simmer over medium-high heat. Set a heatproof bowl over the simmering water and add the semi-chocolate chips and vegetable oil. Let the chocolate melt, making sure to stir occasionally to avoid any lumps. Once the chocolate is at a smooth consistency, simply remove the bowl from the heat.

Time to Dip the Strawberries
Step 1: Gently rinse strawberries and dry on paper towels. Make sure you dry the strawberries completely or the chocolate won’t stick properly. Line a cookie sheet with waxed or parchment paper. You can also use a styrofoam board if you want to create a more professional look.
Step 2 & 3: For more control when coating the strawberries, pierce each strawberry with a skewer.
Step 4: Dip each strawberry three-fourths of the way. Lightly shake each strawberry over the chocolate mixture to get a smooth coating. Gently sprinkle the crushed peanuts (or toppings) while the chocolate is still wet so it slings to the chocolate dipped strawberry.
Step 5: Lay each dipped strawberry onto the cookie sheet lined with parchment paper or gently stick each strawberry skewer on the styrofoam. Tip: If you use the styrofoam method, make sure to take off as much excess chocolate as possible to avoid it dripping down the strawberry.
Step 6: Now pop them in the refrigerator uncovered for at least 30 minutes or until chocolate is firm. After this time, keep them in a plastic container in the refrigerator until they’re ready to eat.
And voila, you’re done!
Create the Happy Galentine’s Day Lunch Boxes
Putting together these cute lunch boxes are so incredibly easy but add that little extra touch. Now we went for small Chinese-takeout boxes in different variants of pink, as well as a pack of ‘sweetheart candy’ foam heart stickers to seal each box.
To assemble, fill each box, making sure to alternate between each item. We went with the following setup:
- 1 box of two (or three, depending on size of takeout) pinwheel sandwiches
- 1 box of 2 Chocolate covered strawberries
- 1 box filled ¾ of the way of the Sweet & Spicy mixed nuts
Repeat the process until all the food has been distributed evenly.
Next, simply close the boxes, add a foam sticker to the top, and put it in a basket, paper bag or gift bag. You can also include a bottle of water or juice too.

I really love these lunchbox ideas. There are so many ways to show someone that you care and these would definitely do that.
