[dropcap]O[/dropcap]ne of the best things we love about the Holidays is that we can don our aprons, prep our ovens, and start baking Christmas favorites to our hearts content. First thing we baked were these delicious vanilla oatmeal crisps, which have just the right hint of nutmeg to get us feeling warm and fuzzy. As sharing is caring, we wanted to show you step by step on how to make these quick and easy cookies to get you in the festive mood.

- 1 1/2 cups of rolled oats (quick cooking preferred)
- 1/2 cup of unsalted butter
- 1/4 cup of flour
- 1/2 cup of chopped walnuts (optional)
- 1 tablespoon of vanilla extract
- 1 cup of sugar
- 1/4 teaspoon of salt
- 1/2 teaspoon of nutmeg

- 2 large mixing bowls
- handheld mixer or whisk

[Preheat oven to 375]
Step 1:
In a large bowl, beat butter and sugar with handheld mixer until creamy. Tip: Make sure butter is at room temperature so it easier to beat.
Step 2:
Take another large bowl, and add the flour, vanilla, nutmeg, and salt. Add the mix gradually into the butter and sugar to blend everything more smoothly. Whisk until well blended.
Step 3:
Stir in the oats and walnuts. Tip: You can supplement walnuts for almonds or pecans.
Step 4:
Cover the cookie batter with parchment paper or seran wrap. Leave it in the refrigerator for at least 30 minutes. Simply take the batter out of the refrigerator when ready to use.
Step 5:
Line a large cookie sheet (or two small) with parchment paper. Scoop a tablespoon (to 1 1/2 tbsp) of the batter, and place it on the baking sheet. It should make approximately 15 cookies. Tip: make sure to space the cookies at least 2-3 inches apart as they will expand in the oven. Using your fingers (or back of a spoon) lightly flatten the cookies so they bake evenly.
Step 6:
Pop the cookies in the oven for 12-14 minutes or until golden brown. Tip: Rotate the baking sheet on the half point to get a golden sheen on all sides.
Step 7:
Once golden brown, take the cookies out of the oven and let them rest for a minute or two.
Step 8:
Serve with our Hot Caramel Apple Cider, tea or milk. Enjoy!
