[dropcap]S[/dropcap]ummer might be over, but here in California the sun is still here to stay. So what better way to refresh the palate than a mouthwatering ceviche. A popular Latin American dish, ceviche generally consists of raw seafood like fresh fish, tossed with lemon juice, onions, cilantro, chiles and other spices. However, you can find many variations of this classic seafood dish all around the world. We love making our popular Shrimp and Crab ceviche as an appetizer for parties and ceviche tostadas as the main entree for dinner. So much so, we are sharing a quick and easy recipe on how to make this delicious Shrimp & Crab ceviche at home.

- 1 large Onion
- 2 to 3 medium Tomatoes
- 3 Jalapenos (amount based on preference)
- 1/2 cup of Cilantro
- 1 large Cucumber
- 5 to 6 Limes

- 4 small avocados
- 2 cups of Imitation Crab
- 2 cups of cooked shrimp
- 2 tbls of organic Greek Yogurt
- 2 celery stalks as garnish (optional)
- pinch of salt for seasoning (optional)

Step 1: Peel and cut your cucumber in bite size cubes and then finely chop your onion and tomatoes. Combine them together in a large pot or serving bowl.
Step 2: The amount of jalapenos you use will depend on how spicy you like it. Again, finely chop your jalapenos and cilantro. Proceed to add them with the other ingredients. Tip: The best way to finely cut cilantro is to roll the cilantro in a cigar-like form and then cut evenly.
Step 3: Next cut your cooked shrimp and crab in small pieces and add them to the mix. Make sure to combine everything together.
Step 4: Add the juice of all your limes in the pot. Stir until all is well combined. Tip: Use a lemon juicer or a to make squeezing all the limes easier on you. If you don’t have a lemon juicer, cut your limes in half and jab each lime slice with a fork to get all the juices.
Step 5: Now cut your avocados in bite size pieces and add them to the pot. Give everything a gently stir so you don’t mash the avocado.
Step 6: Take 2 tbls of organic Greek yogurt and add it to the rest of the ingredients in the pot. Add the pinch of salt for more flavor (optional). Stir everything until all the ingredients are well combined. Put a lid or saran wrap over the pot and refrigerate for at least four hours.
When ready to eat, just garnish with celery and a lime wedge. Serve with tortilla chips.
