[dropcap]W[/dropcap]ith the warm weather we have been having all summer, we have been coming up with fun, new recipes to stay cool. So we took a look inside our refrigerator to see what we could use to make a light dessert that was not only quick and easy to do, but also heathy. Luckily for us, we found a crate of lychees and a bag of frozen blueberries. We recently learned about some of the benefits of lychee in improving blood flow, weight loss, and protecting the skin. This bumpy skin fruit is also packed with Vitamin C. What better fruits than these to create our take of the classic popsicle. Our twist: delicious mini square-shaped blueberries & lychee popsicles-a perfect treat for the last days of summer. Here we share this easy recipe.

- 2 cups of Frozen Blueberries
- 12-18 Lychees
- Honey Syrup *
- 1 Strainer
- 1 Large Spoon
- 1 popsicle/ice cube mold (any shape)
- 2-3 Bowls
- A Ninja Bullet 18oz Jar and blade (or Regular blender)
TOTAL TIME: 15 MIN PLUS 3-5 HR FREEZING
SERVINGS: 6
Recipe for Honey Syrup
- 1 cup of water
- 1-2 tbsp of Organic Honey
Bring the water and honey to a boil and set aside.

Step 1
We need to first peel the lychees and then take out the small seed in the middle. Make sure to carefully peel the outer skin in a bowl because the juice from the fruit can get everywhere. Plus we are going to want to use the juice with the lychee. Simply repeat the process until all the lychees are done.
Step 2
Once we have all the lychees peeled and unseeded, it’s time to throw the fruit (and juice) in the Ninja Blender jar and attach the blade. Next use the Single Serve Setting until all lychee is nice and smooth. For those not using the Ninja Blender, simply put the ingredients in a blender and blend everything together until you get the right consistency.
Step 3
Next throw in the frozen blueberries, honey syrup and blend again until smooth. This might take several batches, so have a bowl on hand.
Step 4
Take a strainer and slowly pour in some of the juice at a time. This helps the popsicles hold their shape more easily. But this step can be skipped for those who like a little more fruit bits in their popsicles. [tip: Us the back of the large spoon to softly press down on the liquid. This will the speed the liquid through the strainer.] Once this step is done it’s time to carefully pour in the liquid into the molds. We chose square cubes, but feel free to use other shapes as well.
Step 5
Put the mold in the freezer for 3-5 hours (depending on how solid you like them) so they harden. Once done we should be able to pop the popsicles out without difficulty. Just place them in a plate and we are done! Now to enjoy! [Tip: Wait an hour or until slightly hardened to add toothpicks or popsicle sticks for that authentic popsicle look]
Alternative
We love drinking water, but sometimes we need something to jazz it up a bit. These mini popsicles work great as fruit infusers. Simply taking 2-3 cubes and drop them in a glass of water (12 ounce at least). Stir until the cubes dissolve. What we end up with is a refreshing blueberries and lychee flavored water.
