Edamame, Tomato & Basil Salad
Popular in Asia, Edamame is seen more and more in the United States. These immature soybeans are rich in fiber and low in calories and carbohydrates. They’re also a great way to reduce cardiovascular disease. Edamame has been found to aid in weight loss. According to Dr. Oz, one the best frozen foods for weight loss is edamame because they are a great source of protein, which can indeed boost our metabolism.
To keep things light, we suggest an Edamame Tomato & Basil Salad with a lemon-pepper vinaigrette. Combine half a cup of boiled edamame beans with a quarter of a cup of cherry tomatoes in a small bowl. Take a few fresh basil leaves and coarsely chop them. Add them to the bowl. For the vinaigrette: In a bowl, combine 1 tbsp of lemon juice, a pinch of pepper and 1/2 tbsp of EVOO (Extra Virgin Olive Oil). Whisk it all together. Add salt for taste. Pour the vinaigrette on the salad and Enjoy!
